Nan is the outmoded Punjabi white bread, a swollen and blistery tinny bread completely made in the tandoori clay oven. In the restaurant, bun-sized smithereens of currency are patted out into a disk and shove against the oven walls to puff, blister and brown, cooking concluded in impartial a few minutes.
